I have had to remove silicon before now and a razor blade flat on the glass is effective, albeit with a need to be careful that you don't cut yourself. +1. Of course I can't find mine at the moment (I'd post a pic, otherwise), but there is a gadget (a handle, really) that holds the razor blade flat...

Looks nice. Yes, 10 cm of insulation would make for a pretty dead space!
My only question: if clients are standing on the riser, will they feel claustrophobic due to the low ceiling?

Following your example in the photo, I might use chicken wire as a diffuser myself.

Perhaps I missed this, but is the door an interior-only door? If it is, then MDF should work fine. If it exposed to the outside, you shouldn't put MDF on that side of the door as it doesn't play nice with moisture.
